Winter gives the vine the rest it needs for its biological cycle. It has just undergone an exhausting period devoted to vegetative growth and grape ripening.

The first work in the soil begins, while the first blends, under the watchful eye of the winemaker, take shape. Then comes the time for "pruning" (see photo), which in no way disturbs the grape variety's vegetative rest, and in fact accompanies its awakening by regulating the quantity and quality of the buds to come.
