A number of winegrowers are taking the path of renewal to offer biodynamic Champagne, i.e. from vineyards that have been worked biodynamically, with low or no dosage (i.e. without the addition of a yeast- and sugar-based liqueur), and no added sulfites either.
It's certainly a good thing to revisit the work done on Champagne, as it's a product that can sometimes be over-worked in order to offer consumers perfectly consistent cuvées from one vintage to the next.

BONUS: Biodynamic winegrowers are in communion with the moon, according to its influences, to best position their viticultural treatments and elaborate their wines.
The "descending force" is destined for the soil. The stars have an ascending and descending force, and for the soil they take advantage of the sun's descent as well as the moon's descent, which lasts about 15 days.
The "rising force" is aimed at plants. It begins at dawn, as soon as the sun rises and the moon rises.
