"At the start of the harvest, sanitary conditions remain good, with satisfactory average bunch weights. Gluconic acid levels are stable and botrytis intensity is contained for the moment.
The watchwords on this day are vigilance, heterogeneity and agility.
Vigilance is required against all forms of rot,
The heterogeneity of regional and plot maturity
and
The ability to adapt picking routes according to parcel maturity.
The Perrier-Jouët champagne house concludes: "One year follows another, but no two are alike... After a complex viticultural year, we're in for a complicated and qualitatively heterogeneous harvest! A race against time depending on weather conditions. Nevertheless, the musts are full of surprises...to be continued after fermentation.
