The family Fleury, des producteurs de champagne établis dans la région de la Bar Coast in Champagne méridionale, possède un vignoble de 15 hectares principalement dédié au pinot noir, avec quelques parcelles de chardonnay, white pinot and pinot gris. Emile Fleury, le grand-père, a été un pionnier en implantant des pinots noirs greffés après l'invasion du phylloxéra. Son fils, Robert Fleury, a débuté sa propre production de champagne in 1929 en devenant "récoltant-manipulant", avec une visée de qualité. En 1962, Jean-Pierre Fleury a pris les rênes du domaine familial, introduisant des pratiques écologiques dès 1970, telles que le désherbage mécanique et l'utilisation d'engrais organiques.The champagnes

En 1989, la famille Fleury, productrice de champagne in the Bar Coast, a naturellement adopté la biodynamics, devenant ainsi le premier producteur de Champagne à utiliser cette méthode. La quatrième génération est actuellement à la tête de l'entreprise, avec Jean-Sébastien Fleury supervisant la vinification en veillant à respecter les normes de la organic viticulture. Une galerie de huit fûts de chêne a été créée sous sa direction pour le vieillissement des wines. Il a également créé le premier vin sans soufre ajouté, la Sonate N°9. Morgane Fleury dirige Ma Cave Fleury from champagne à Paris depuis mars 2009, proposant les cuvées de la famille et des vins biological and biodynamic.Benoît Fleury gère un vignoble exploité en biodynamics depuis 28 ans, se concentrant sur l'amélioration de la biologie du sol et de la biodiversité pour exprimer les caractéristiques uniques du terroir. Le vignoble a reçu plusieurs récompenses internationales, dont le coup de cœur du Guide Hachette en 2014 for its first Cuvée Sans Soufre Ajouté, Sonate N°9 Extra-Brut. The champagnes produits, tels que Cuvée Blanc de Noirs Brut, Fleur de l'Europe Brut, Rosé de Saignée Brut, Cépages Blancs 2010 Extra-Brut, ont remporté des médailles d'or et d'argent dans des concours prestigieux. La cave produit environ 200 000 bottles par an à partir de raisins biodynamiques provenant de vignerons partenaires.
