Family history Bonville, winegrowers depuis les années 30, commence modestement près de leur domicile, mais la détermination d'Alfred Bonville, motivé par son fils Franck, les a conduits à acheter une Maison de vignerons à Avize in 1937. Après la libération de leur outil de production, Franck Bonville a lancé des vintages éponymes et a étendu le domaine sur le terroir d'Avize (Côte des Blancs). Au fil des ans, la famille Bonville a évolué avec les avancées technologiques agricoles, passant des tracteurs dans les années 60 à l'utilisation de petites cuves en acier émaillées puis en acier inoxydable dans les années 90 pour une vinification plus précise.In 1996, Olivier Bonville, fils de Gilles Bonville, a rejoint la 4ème génération. Avec un diplôme national d'œnologue de Reims et une expérience en Corse et en Allemagne, Olivier Bonville se concentre sur des pratiques respectueuses de l'environnement dans leurs vignobles de champagne. Certifié HVE (Haute Valeur Environnementale), il travaille en fonction des conditions météorologiques et prend des mesures préventives pour leurs champagnes.
