The House of Champagne Lancelot & Fils, une famille de winegrowers based in the Côte des Blancs, a des racines remontant aux années 30 en tant que "bouilleur de cru" pour la Maison Goyard. L'arrière-grand-père Jean Lancelot, propriétaire de vines à Cramant, a été suivi par son petit-fils Daniel Lancelot dans les années 60. Claude, l'un de ses fils, et son épouse Nadine se sont installés à Avize, développant leur activité viticole. En 2011, Hubert Lancelot a pris les rênes, modernisant la vinification et se concentrant sur le respect de l'environnement.

Hubert Lancelot cultive sur 8 terroirs différents, offrant une diversité aromatique remarquable. Les Chardonnays come mainly from the Côte des Blancs, tandis que les Pinots Noirs sont plantés à Celles Sur Ource dans le département de l'Aube. Depuis 2017the House of champagne Hubert Lancelot est certifiée HVE (High Environmental Value), et Hubert travaille vers une viticulture plus BIO, cherchant la certification VDC (Sustainable viticulture in Champagne).Hubert Lancelot pratique une vinification moderne avec un pressoir de 4000kg et un système de refroidissement des jus pour préserver les arômes. Il évite la fermentation malolactique et possède une cuverie thermorégulée avec des caves voûtées en pierres apparentes. L'étiquette médiévale de ses champagnes reflète son attachement à cette époque.
The House of champagne Hubert Lancelot propose deux cuvées parcellaires de terroirs différents, un ratafia vieilli en fût de chêne, et une cuvée de réserve. Un rosé de saignée est également en prévision. La réputation d'Hubert Lancelot est celle d'un vigneron atypique, passionné et mémorable, reflétant ses approches uniques dans la production de champagnes.
