Blanc de Noirs Vieilles Vignes Extra-Brut without case from Maison Pinot Chevauchet is a 100% pinot meunier champagne. The grapes were selected from the 3 oldest plots of meunier (nearly 70 years old with very low yields), Pierrotte, Marie Mulotte and Neuville. This extraordinary Cuvée is vinified in foudre (Burgundy oak), without bâtonnage.
To the eye, a sublime golden yellow color with pinkish highlights and a very fine, melting bubble, the cordon remains fine and persistent on the surface.
On the nose, complexity and freshness open on fruity notes with a lovely bouquet of white and yellow fruits. On aeration, a few open aromas of prune and quince, followed by slightly saline notes to tantalize the taste buds.
On the palate, richness and maturity with salinity and fruity freshness.
Pinot Chevauchet's Blanc de Noirs Vieilles Vignes Extra-Brut without case will sublimate your aperitifs, but as a highly gastronomic wine, it will also go well with seafood, oysters or fine fish.
