The Cuvée Folies de la Marquetterie with case from the Taittinger Champagne House is a champagne blend composed of 45% of chardonnay and 55% pinot noir made exclusively from grapes grown in the Folies vineyard. In the selected plots, the grapes are harvested "en vert ", allowing them to reach optimum sugar content and ripeness. At the end of the harvest, only the juice from the Cuvée (first press) is retained. Each parcel is vinified in small volumes, and some batches in oak casks. A slow 5-year maturation in bottle completes the harmonization of this wine .
A golden color with fine, delicate bubbles.
Intense, very fruitynose developing aromas of peach and apricot compote.
On the palate, the attack is ample, supple and fruity, releasing dominant flavors of yellow peach. The finish is pronounced and expressive, subtly marked by woody notes.
Cuvée Folies de la Marquetterie with case from Champagne House Taittinger is a Champagne that goes perfectly with robust dishes such as roast meats and fish in sauce.
