Cuvée Prestige Extra-Brut from Maison William Saintot is a champagne champagne blend made from 75% Pinot Noir (terroirs of Bisseuil, Avenay Val d'Or and Mutigny) and 25% Chardonnay (terroir of Bisseuil), 100% of which has been blended since 2010 using the " Soléra " method. The average age of the plots is 45 years. The subsoils are clay-limestone, and the soil is ploughed as in days gone by. Vinification for this Cuvée is 80% in foudre or oak barrels and 20% in stainless steel tanks. Fermentation is partially malolactic, with tangential filtration. Bottling takes place in June of the following year, with an average cellar ageing period of 30 months, followed by disgorging for a minimum of 6 months.
To the eye, golden robe.
On the nose, cream and greediness are present.
In the mouth, notes of brioche and toast. It is a powerful wine which evolves, it develops its silky and mature side with aeration.
